It's easier if you just pull the engine out...then you can get to all the plugs and changes the wires with no problems atall!
But, seriously...some of them(plugs) are easier to get to from underneath. Mostly the back two on either side.
Wires are gonna be a pita no matter which side you do them from...

Your 80 is probably much like my 82 as far as wires go.  If yours are routed as originally installed (through the motor mounts) I had good success with cutting the old wire on the distributor side, removing the boot from the plug side of the new wire, tying the two together and pulling the new through the mount as I pulled the old one out.  Reinstall the boot with a little dielectric grease to make it slide a little bit better.

Ummmnnnn, I like the bottom.....

Chip's method is purty sweet and works well. (note.... use electrical tape around the wires because it wraps tight over the plug outer cover)

You can also use a wire fishtape if you happen to own one (which I do). These work purty well too.

Using the fish tape method you can have yer choice of Top or Bottom..... but I still like the Bottom..... cuz I like to see where I am headin into......

I like the idea of cutting the old wire but like you said how do you know which wire to pull thru to replace the old one? It would be nice of they were numbered so you know which one to use.
I am with Tux on the top or bottom thing....

When I bought the date-coded repro wires for my '74, they came with a chart showing what length wire went to which cylinder, and how to route them in the shielding. The wires came from Lectric Limited. I had the engine out on a stand at the time, so installing them was easy.
I'll look and see if I might still have that chart, but I doubt it...it's been12 years since I did mine...
I do still have the original wires, in a box...perhaps the chart is in the box with the wires...

Before I start I just want to thank the person that invented wobble socket joints (universals).

Plugs and wires are done, and I will say it will another 30 years before I change them again. 9 hours spent on Top and Bottom of car, most from the bottom. Really got to use that new creeper moma bought me last year for fathers day. Chip's idea worked great about tieing the wires together to feed em through the tite spots.

Drivers side heat shields came right off no problem, pass side not so good. I was able to get the top one off with some munipulation but without removing the starter the bottom one just was loose enough to route the wires through. I did put all the shields back and that is what took so much time. I just took my time and enjoyed the adventure. Tomorrow will be the cap and rotor.

I did the wires one at a time, so I don't think I mucked anything up, we'll see at the end. I look like I lost a battle with a nasty axed cat!   I loved every minute of it! LOL
