You never want to leave out the thermostat! If you do, the coolant will run thru the radiator and the engine so quickly, it won't have time to transfer any heat.
Ideally, the fan should come on "as needed", regardless of thermostat specs. So...even with a 160deg thermo, the fan shouldn't be on until around 190-200deg. The fan temp sensor will control that.
Running the engine too cold creates more wear/tear, as well as messes with the emissions, and engine/fuel efficiency.
