I remember having a hard time finding tires for the 15" Rallye wheels of my 71LS5 that would be consistent with the specifications of the vehicle (Speed and load rating). I ended up buying four Firestone PV41. This tire was specifically developed for the police and a V speed rating and good performance ratings (cornering, etc.). I have put about 21,000 miles on them and the thread is still good but this was 14 years ago and I can feel and hear the aging rubber failing to grip the road the way it should. Long due for replacement. Unfortunately, the PV41 is not available anymore and I can't  find a replacement for it.
I currently have:
225/70R100V on the front wheels and
235/70R102V on the rear wheels (the 235 would rub on the front fenders when turning)
Any suggestion for a good replacement that does not compromise safety?

Since I run 255 - 60/15, I'm surprised that you're running a narrower tire and still are getting fender rubbing. Have you lowered the suspension any? By the way most tire manufacturers do not recommend using tires past 6 years since manufacture date. Have you checked at tirerack.com?

Standard suspension, standard setting. The car is number matching. Nothing special here. I had the 4 wheels mounted with 235/70R15 and it rubbed in the front when I pulled out of the place. I pulled back in and had the front tires changed for 225/70 and it worked fine. Barely noticeable visually; you’ve got to know. Yes, I know the 6 years - 10 years max. I drove 22,000 miles in 15 years and did not think of it. Not much wear. I was more concerned about the oil and other stuff. But I have noticed, lately, that it was not gripping as well and it did not take long for me to understand I had been oblivious of my tires aging.

Yes, I have checked Tire Rack (Tire Rack is my first pick)
I know about the Cooper Cobra and the BF Goodrich. The Cooper Cobra is probably a good pick but is only T-rated.
I was totally unaware of the Vitour Galaxy R1: THANK YOU!
It is actually H-rated with the 70 aspect ratio but it is certainly OK.
I found very few reviews about it but they are excellent. Mostly by people driving older cars.
I will do some more research about it. It looks promising. Thank you Gary!

I have the 235-70 15's Cooper Cobra on my 74 on all 4 corners with no rub problem, but with non stock wheels. Previously had the Firestone Indy 500's on and had the same too old but great tread problem. No longer make 15's in Firestone so I switched to Cooper Cobras based on the reviews and good reports from people who run them They perform equal if not better than the Firestones  and priced very competitively. $100 each at Mavis. You say your car is stock and nothing special  so I wouldn't worry about the speed rating. If you were racing it or autocross or such then maybe.
