I am in the process or restoring the door latch and opening mechanism. Since I do not have a solvent tank can I use carb cleaner to degrease the mechanism with no ill effects?

I realize that I will have to regrease with lithium grease after I clean the mechanisms up.

I am cleaning them up because there is a lot of grime and old lube as well as a broken sping in the lock/opening assembly.

Just about any kind of solvent will work on the connecting rods. Don't use solvent based cleaners on nylon or plastic parts, a detergent will clean them just fine. And yes, the white lith grease is the stuff for lube on moving parts like that.
