How do you tell if your doors are hanging properly? I have a 75 coupe that I tried to install new custom delux door panels and they keep hanging up on the bottom when you open the door. Ekler's tech says my door may not be hanging properly. How do you tell and how do you fix the problem? Thanks

Does the door open and close easily?
Next, when shut, does the door have equal spacing all the way around. Front edges equal to the rear, and all edges even top to bottom?

If it's the door, it could be hinges, hinge bushings, or alignment of the door itself.
I wouldn't rule out the possibility of a badly fitting panel.
I just received the fuel lines for my tri-power and the end line did not fit at all (eckler's). It was over an inch off!

I agree with all of the above.
In addition to the possibility of an "off-size" panel, check your sill plates for fit as well. If you have carpet and/or padding running too far under it, this will elevate the sill plate and can produce the problem you describe. (a bent sill plate, debris lodged under it or missing/incorrect screws can all have some effect)

The doors open very easy however there is more distance between the front of the doors and the body than there is at the back of the doors.

I did notice that the ond panels have a bit of a space between the bottom of the panel and the sill plate while the new panel rubs against the sill plate with no space between them at all.

I'm assuming (always a dangerous enterprise) that you are referring to the open gap (front to back) rather than the flush-fit of the door (face plane of door relative to face plane of fenders).
The gap is adjusted by loosening the hinge-mount bolts at the pillar. There may also be some adjustment possible by removing the inner panel of the door to access the hinge mounts. Loosening (NOT removing) these bolts should allow you to adjust the front and rear door gap simultaneaously. It also allows you to adjust the vertical fitting angle of the door if necessary. Angular adjustment typically requires loosening the door latch mechanism and adjusted the latch striker pin (on body at rear of door opening) up or down.
