Unless you want the hinges off to paint separately, the easiest way is to unbolt the door from the hinge. You might want to drill an 1/8 inch hole through the hinge and door before you remove them to help realign. Then just remove the inner door panel and the hinge cover and remove. If there is any wiring for power windows, it is fairly easy to disconnect. There is no special trick to reinstalling. Just close carefully and make any necessary adjustments.
If you want to remove the hinges from the body, keep track of the shims so you can put them back.

My advice is to leave the doors on. They are heavier than they ought to be with door glasses and hardware in them and can be a PITA to rehang and align.
I've done it both ways. Took the doors off the '68 when restoring her. Learned my lesson and left the doors on the '80 when the time came.

BE CAREFUL WITH THE HINGE PINS. YOU MAY WANT TO SHAVE THE HEAD A BIT TO CLEAR THE THE FENDER EDGE. i CHIPPED MINE GETTING THEM BACK IN. I WAS OK WITH IT BECAUSE I NEED A PAINT JOB ANYWAY.GOOD LUCK.
