At what temp should my gauge sit at?

No --- I don't remember the exact temp reading with the old temp sender, but I do know that it concerned me because it was reading high and that is why I replaced it.

Forget about the actual gauge reading until you know what the actual temperature of the engine cooling system is.

We thought that our Legends racecar was running too hot. Once we started 'shooting' the engine oil filter & cooler lines with a pyrometer we realized that the gauge is only a rough indicator.

I thought that my '73 Vette was running too hot last summer. I did the same thing, 'shot' the radiator inlet & outlet with a pyrometer. Now I know mine is OK.

See if you can borrow a pyrometer and do some 'shooting' on your cooling system and see if your gauge reading agrees with the pyrometer readings.

michaelandyolie mentioned that his car ran hotter at higher speeds. My '75 does also. At 65 or 70 mph the fan engages.

I would have thought that at higher speeds the more forced air would have had a greater cooling effect.

Does anyone know what causes it run hotter (not much, just enough for the fan to engage) at speed?

Well,the engine is working harder at speed, and if the lower spoiler is broken or missing, or the foam seals around the radiator support are missing, the car will run hotter. JOe
