Sometimes, a car body would be damaged on the line, and have to be pulled off, and sent back to the paint booth. This would throw the assy date off even farther.

Joel and Dave are right on the money. The trim tag date is an alphabetic character and 2 digit number with the alpha character representing the body build month and the 2 digit number as the day. Generally the build month starts with A=August, B=September, etc but that does vary a little. The '69 model year had a long run beginning in August of 1968 and ending in December of 1969 so the alpha characters would have been A through Q I believe. The '70s began production in January of 1970 so that year A=January.
If you're going by VIN number check 'The Corvette Black Book' as I think that lists the ending VIN number for each month. Mine's out on loan at the moment but I have another book at home that breaks out the VINs by month so I'll look at that also.
If your VIN says March and the trim tag says August something doesn't jive in my mind.
