When the doors are open the courtesy lights are on and stay on. I am not sure if this is an issue itself, but I would like to have them turn off with the doors open, either by timer or switch, so that I can have the car sitting for several hours while working on it or showing it without having the lights draining the battery. Any other time I would like the lights to work appropriately. Any suggestions?

How bout a battery disconnect on the battery itself? The type that can be loosened with a knob on the terminal.
My first inclination is to not disconnect the battery every time I go to the park and want to open the door up for the breeze and listen to the radio. It is easy enough to install a battery shutoff if that is the only answer. Does anyone else have any ideas?

I seem to remember in years past that turning the headlight switch counterclockwise to the stop would cancel the interior lights. Don't know if that's still a possibility or not.

you could remove wht wire from courtesy lts delay timer which goes to door switches and add a toggle sw to keep the door switches from turning on lights. not sure how hard it is to get to timer
