I want to replace my current alternator that is putting out about 55 amps.  Car has A/C and a radio amp on it.  Which should I go with?

70 amp, 85 amp or 140 amp, all in Ecklers.

Just to complicate your decision, there is also a 100 amp replacement unit.  The more power you are generating, the more horsepower (and fuel) you are using.  But it doesn't matter what the capacity of your alternator is, only what the load on it is.

Air conditioned 79s came with a 61 amp unit, if that makes a difference to you.
