Engine Harness and Vacumm Hose Removal Help Neded

Vette(s): 1972 Coupe Anything, but Stock and more mods to come! SSBC Force 10 Brakes, 3.73, TH350, 355 CID, Rack and Pinion, Vette Brakes suspension front and rear.
I've stripping and redoing my engine bay. Engine and trans are out. I'm removing all the harness and vacuum hoses from the engine bay.

I guess I was under the impression that the two harnesses simply disconnected at the firewall and the whole harness would come right out, but with everything disconnect there is still three wires that I need to contend with. Two of the wires from the engine harness and one wire from the hood/alarm switch goes through the firewall grommet at the oil pressure line/tach drive location. Where do they lead to under the dash so I can do the minimum amount of dash removal to disconnect these wires to pull the harness?

Also there are three vacuum hoses by the brake booster that enter through a firewall grommet. I know they are for headlight and wiper control, again what is the mimimum amount of dash removal to pull these through the firewall for replacment?

Am I better off removing the entire gauge cluster or just getting it loose so I can get my hand behind it?

Any help would be appreciated.
