I found a good deal on a set of tires, but I'm not sure how they'd look and I can't put one on to compare. They're 215/75/15. Any idea how these would look on a '69, are they too skinny?

You need a 70 series, not 75. You may well have problems having those narrower tire's sidewalls pop out on your car's 8" wide rims. If they do, you may have wear problems. A 7" wide rim is about the max you can properly fit that 75 series to.

i didnt think that height ratio mattered too much for rim width
a 215/80, 215/70, and 215/60 are all 215mm wide.
but i do agree that a 215/75 is probably too tall for the vette.

Even though the cross section of the sidewall may be the same, the more narrow aspect ratio of the 75 series will not lay its tread level on the ground without overinflating it with a too wide rim.
75 series tires are fine for most sedans and earlier muscle cars and earlier generation Vettes, but too narrow and tall for C3's. You may well have clearance and handling issues.

you are correct sir.
maximum rim width as published by the TRA for 215/75 tires is 7.5"
