Found my intake gasket was leaking oil towards rear area, removed intake and wanted to do more cleanup, what can I use to clean intake manifold ports off engine I ordered cleaner for the outside but wanted to clean inside as well, also noticed valves could use some cleaning but not looking remove heads at this point, I ordered GM top engine cleaner to use once I put back together, but can I use anything while I take is off or is that not safe

Clean the intake manifold as best you can, leave the intake PORTS and VALVES in the head alone....very easy to dislodge carbon that will fall down into the cylinder(s) and create more problems. Best to stuff paper towels, or similar into the ports while you scrape the old gasket off the heads, then carefully remove them once the heads are clean of gasket. Also use paper towels or rags to cover the lifter valley while scraping gaskets.

Filling voids with something foamy, like whipped cream or shaving cream, first will catch little things that like to fall into open spaces.  A crevice tool, or some other pointy attachment, on a shop vac will capture all the stuff when you're done messing around.

You should be using Top Tier gas as it has more detergents in it than cheaper grocery store type gas.

Also, a fuel system cleaner additive like Techron or Seafoam will start cleaning the intake valves.

Brake cleaner might clean up the intake manifold pretty easily.

Decided to just stuff paper towels in ports on engine, laid towels in valley while cleaning old gasket, cleaning manifold with simple green and brush waiting for loctite aluminum cleaner and brightener might paint if needed, also yea I do use Shell VPower and Lucas octane booster and will run the top engine cleaner thru carb once back together

With Shell premium gas do you really need octane boost?  Just curious.  10.25 : 1 compression ratio.

Yes Shell Gas is good but not sure what previous owner put in the octane booster I was told can help keep away any pinging and should help in cleaning either way just cleaned the intake manifold have correct gasket ordered from zip, but ordered felpro coming tomorrow to compare which is better quality
