Lately I am only getting her out on weekends. When I go to start her, I have to pump the peddle 6-10 times to get her started. After she starts, I notice wet black soot like stuff for about a foot long on the garage floor under each exhaust pipe. Also a bit of smoke on first start after a week. After warmup and riding, she starts on the first crank with no smoke and runs fine. Still have my cat but figure it must be really plugged up by now. Not sure why the change? I am thinking that since I have to pump so much, she is just getting too much fuel and is coughing it out?

Same thing was happening to mine when it would sit for long periods of time. Since the carburator has been replaced, the symptoms you describe have gone away. I also try to use the vette more often and for longer drives....

Your fuel is soaking the floor of your intake. Very common that fuel purks out of the carb and puddles on the bottom of the intake and then its way rich the next time you start it up.
