I can tell ya, tho, with an air-gap intake, chances are you're not gonna be able to run a stock hood on a '79, no matter what air cleaner you try.

The '78 L82 I recently sold had a Performer intake I installed with the original Q-jet carb and I liked the combination. You might want something made to better take advantage of the torque ability of the 383...maybe an Edelbrock Performer RPM Air Gap, but you would need a drop base air cleaner to use it with your stock hood.
I would suggest contacting Edelbrock's tech department (or Holley's or Summit Racing or Jeg's) and tell them what you have and what you want out of it. They can give you good recommendations for an intake and carburetor to give you the best results.

I think you shop guys were right. That seems very very conservative for a 383 stroker. American Speed built my engine and my dyno sheet shows 505hp and 512 ft lbs torque at 4200 rpm.
You will enjoy the ride, but like Bob said, you'll pay dearly for it at the gas pumps. Good Luck with your clearance problem.
Well after much deliberation I decided to stick with the professional products manifold that came with the engine and get a Corvette Hi-Rise Hood, 1977 - 1981 from ecklers. There goes my budget I'll most likely get a demon 750 carb unless convinced otherwise. No point in building a hot rod if I have to smother my engine just to use the stock hood. At least now I can move on to the hedders and exhaust. I called Sanderson and they recomended the CC5 Block huggers. Is anyone running these and if so any issues? I'm going to run true dual (no cat). Many Thanks to all who replied! The lights are on but no one's home look from parts store guys was getting old.
