I'm going to switch from the stock air cleaner to an open sided air cleaner.
I see that the stock setup has a grommet and tube going from the rear of the passenger side valve cover up to the side of the stock air cleaner. Just inside there is a breather element (filter).
With the open air cleaner, what would be the best way to address the issue of this function?
I just plain wonder if I can put a solid grommet in the valve cover and leave it at that.

You must have a vent in the valve cover for the PCV system to work. Otherwise, you'll find how many places on your engine it is possible to have an oil leak.
Most aftermarket open element air cleaners have a plastic elbow/nipple that can be attached to the bottom of the air cleaner base for th hose to fit.
If the air cleaner you have does not have this part, then you'll need to install a push-in breather element in the valve cover, where the tube is now.

Does anyone know;
Is there any difference in using the hose vs. the push in type? I kinda like the look of the push in type but I'll go with what's best for the motor.
I hav'nt got the air cleaner yet.

Joel is right. All that matters is an air inlet for the PCV system. Of course it is important that there be enough filter in that inlet to keep out the nasty stuff. The hose or push in breather will both work just fine, so go with what looks best to you.

I bought a 2"" tall air cleaner (for hood clearance), a K&N air filter and the push in style breather element.
Wish me luck and get ready for spring!
