   Hello all! Would like to ask if anyone has recommendations on a good, detailed book or website on a complete weatherstrip job on a '69 coupe?

All of the Vette restoration books have sections on weatherstrip installation. It is really not difficult. Removing the old stuff is the most time consuming. Going back with the new stuff just takes a little planning and patience. I have done the weatherstripping on every Vette I have owned.

Not a How-To, but the assembly instruction manual (AIM) shows all the weatherstripping and the various fasteners and cement used on the assembly line.  If applicable, the AIM will also have notes on installation.
 
FWIW:  3M weatherstrip adhesive remover works and does not eat paint.  Go slowly and let it do it's thing.
