Vette(s): 1979, 350sb, as my kids affectionately call it "shit brown" Corvette purchased in 1996. 84,000+ miles. Not a show car, but I love her just the same.
If you use strips of carpet under the tires (or the entire car), flipped up side down so the carpet backing is facing up you should not need to overinflate the tires.  I have done this for years and never had flat spotting on my tires.  Also, since the Bounce sheets keep the varmints away, one stuffed into each tailpipe should be enough to discourage them.  Since your paying for the storage you should be able to plug in a trickle charger rather than removing the battery.  That way if you have a great day and want to take her for a spin you can hop in and drive away without the hassle of hookup.  All other suggestions are spot on, and mine are only what I have done without any obvious repercussions.
 
IMHO - If the garage burns use the payout money to buy another shark!

I bought some desiccant from our friends at Mid America Motorworks yesterday.  I'll have to pick up some wood chips, sta-bil and plastic sheet.  I have plenty of dryer sheets at home.  I'm not too worried about the tires because they all need replacement anyway in the spring.  If I take the battery with me, there won't be much point to giving the guy a key.  Plus, he doesn't live there full time anyway.  I'm also not too worried about putting a cover on it because the paint is already screwed up.

If it catches fire or gets stolen, I'll probably be better off anyway. LOL
 
Should I get some sort of signed agreement from him that says I gave him X dollars for storage form X to Y months?

Abso-friggin-lutely!!! You don't want someone else claiming ownership of the vehicle, in case something happens to the guy. This will protect the both of you. You are basically "leasing/renting" an area...there should be some sort of binding contract between the two of you.

I though we all stored our cars for 3 months EVERY WINTER....lol

But in any case my neighbor has rented out 3 garage spaces for years and he requires Your Insurance because his insurance company requires him to get it...???   BTW he charges 125 per month (FYI) and it took him all of 3 hours to rent his only available space last month....

But honestly I now just fill the tank with gas, change the oil, and MOUSE proof the car (Bounce etc... especially in a Barn ..been there done that with MICE....

for 90 days I honestly do not worry about over inflating the tires, or putting it up on jack stands...just not worth the effort in my opinion which is based on storing my own cars for over 20 years ..  Plastic Tarp under the car is fine, on dirt it would be required..on concrete for 90 days honestly questionable... on C3's I like to at least pump the brakes every month...been there done that with leaking calibers way too many times...
they dry out... I do not bother to start the car however... screw it again 90 days is just too short a period of time to worry about it... I definitely would either put a battery tender on it or remove the battery and store the battery INSIDE you home on a tender.. (of my 5 cars if I do not use a battery tender I am replacing at least 2 batteries every spring.)

Just my way... LOL

The place I stored "The Toy" at for several years required the battery to be taken out of the car and a set of keys left in the car.  The keys were needed to unlock the steering and transmission in case the car needed to be moved for any reason.  But if your car will not be blocking another then you probably wouldn't need to leave a set in it.

I would put some dryer sheets in the engine area as well. The mice can find some great spots to make their winter home using the insulation of your wires.
I always use the battery tender, but if there is no electricity for you in the barn, put the battery inside and still on the tender to keep it charged. And don't put it on concrete.

Lots of great advice. Someone told me they use "Isrish Spring" soap shavings in and under the car. I store my car outside in a driveway, the tires are on cement, but the middle is grass. I usually use card board underneath. Should I use plastic instead? When it snows I try to keep all snow from underneath. I also start it up consistently, or is the trickle charger better even if I take it out on a good day?
 
Adam, I would definitely put everything in writing, and include the date you gave him all materials. Plus the date you intend on picking up the car.
Never settle for the "okeydoke"!

I took it to the garage today.  I brought the moisture packs, dryer sheets and disconnected the battery.  It felt like I was disarming a rocket or something.
 
So, she's asleep for the next 3 months.

Cardboard will absorb moisture and hold it under the car.  You want to block moisture from getting under your car.  Definitely switch to plastic or a vinyl tarp.

Hated doing that for the first several years of owning "The Toy".  It is much nicer now being able to walk out into the garage and seeing it sitting there everyday.
