I friend of mine has an '86 vert. He has a small (4x7) utility trailer with a Sears car top carrier bolted to it. He drove it from NY to FL and back a few years ago and never had a problem.
Low center of gravity and low wind resistance.
With the short tongue it is difficult to back up, so just park it so you only have to go forward.
And watch out for small wheels and high speeds.

Two issues:  #1 What held me back from trailering was how absolutely awful the hitch looked on the back of any vette.  Yet like you I wanted to take some road trips and needed storage.  So I ultimately went to a Blacksmith Shop and had them custom build a setup for me that is not visible when the hitch isn't being utilized.  The way it works is the ball/insert is angled to lock into the what the blackmith built.  #2 Be very careful when you pick what you are going to pull.  No matter what the websites say it is real easy to get something behind your Vette that will dramatically effect handling.  I have friends in local vette clubs who have situations that require them to have a wheelchair with them and so I looked at how they trailered those - the units were still too big for me. I started looking at motor cycle trailers and found a mid-70's Escapade that was designed to be pulled behind the old Honda Goldwings.  This was the perfect solution for me - low profile trailer, large capacity, and it came with an articulating trailer tongue that makes manuverability a snap.  I stripped all the chrome off of the trailer and had it repainted and flamed to match the Vetrte - and I actually get noticed as much for the trailer as I do the car.   I have no pictures but am attending a show today and will take some to show you.  Good Luck
