Well, I hate to brag, but I know I can COOK GOOD.  Here's a little "dinner idea" for something different.  It's good for your colon too....might make ya' fart.

Snappy White Chili

2   Teaspoons – Olive Oil

4   Boneless, Skinless Chicken Breasts, diced (I use 4 boneless breast halves)

½  Cup Onion, chopped

3   Cloves Garlic, chopped

4   Tomatillas, chopped

1   (14-1/2 oz.) can Tomatoes

1   (10-1/2 oz.) can Chicken Broth

1   (7 oz.) can Diced Green Chilies

½  Teaspoon Oregano

½  Teaspoon Coriander

½  Teaspoon Cumin

2 (15 oz.) cans Black-Eyed Peas

Juice of 1 Lime

1/3  cup chopped Cilantro or you can use the dried Cilantro Leaves

Add some Jalapenos if you can handle it

Salt & Pepper to taste

In a large sauce pan heat olive oil.  Add chicken and cook, stirring often until lightly browned.  Remove from pan, refrigerate.  Add onion and garlic to pan, sauté until softened.  Stir in tomatillas, tomatoes, with liquid, chicken broth, green chilies, oregano, coriander, and cumin.  Bring to a boil; reduce heat and simmer about 20 minutes.  Return chicken to pan with drained black-eyed peas; simmer about 5 additional minutes.  Add lime juice, cilantro, salt and pepper.  Serves 4.

You can double this recipe very successfully.

PS:  If you don't know what tomatillas are, just ask

Vette(s): had a really nice one. sold it to a good friend. Purchased 2004 custom coupe in Feb. 2009 did not tell anyone here until August 2009. BAD I KNOW.
Well there are a few ideas that come to mind, a every good less expensive steak is called to CHUCK EYE, (first 2 cuts off of the chuck roll) pan fry in hot skillet, pour over a can of cream of mushroom soup.

fry pork cube steak or beef cube steak and place of hamburger buns.

mix with hamburger, chopped up onions, green peppers, celcery, and a little grated carrots, and egg or 2 and a few saltine crackers, form into burger steaks, broil or pan fry, cover with cheese, serve with garlic bread.

Okay fish is easy and quick, believe it or not, frozen salmon, halibut, cod, swordfish, mahi mahi all are good baked, pan fried, brioled, sautee use lemon, garlic, butter, or add half way through cooking teriyaki or sweet and sour sauce.

man i can go on for hours, the secret is to find something, cook it, make a few notes, if you all like it.
good luck
Larry
