I don't think disassembly of the animals is allowed.
We only do that with cows, chickens, pigs, turkeys, fish and sometimes horses.

some people people eat cats and dogs as wellTongue
 
I made the mistake of "meowing" as my daughters were eating some chicken at a chinese buffet once almost 2 years ago now.   Now every time we eat chinese food it takes twice as long to eat as they sit and watch each other so they can time the animal sounds with the fork touching the food. 
 
chicken = cat
beef = dog
pork = possum/squirrel/rat/raccoon mystery meat
