Ok - now for some recipes from the weekend...
 
The seasoning blend I make myself & used on the chickpeas I made & the Shrimp & Grits we made Sunday night:
 
LuLu's Crazy Creola Seasoning (by Lucy Buffett - Jimmy Buffett's sister)
 
1 Tablespoon Salt (I use granulated sea salt)
2 Tablespoons granulated garlic (ok to sub. powder)
4 teaspoons granulated onion (ok to sub. powder)
1/4 cup paprika
1 1/2 teaspoons black pepper
2 teaspoons cayenne pepper
2 teaspoons white pepper
1/2 teaspoon dried thyme leaves
1/2 teaspoon dried oregano leaves
 
Combine all ingrediants & store in an air tight container.
 
Drain 1 can chick peas (garbanzo beans) & toss with 1 teaspoon LuLu's Crazy Creola seasoning. Chill or serve room temp. Spicy & Hot but not a lingering heat. For spicy but mellower, make the night before & let sit in fridge overnight - will not be as hot.
 
For the Shrimp & Grits, we made a double batch. Amounts I listed in ( ) below would be what you would use for a single batch.  Make sure to stir a lot so they don't scorch.
 
Grits with Greens & Shrimp by Nathalie Dupree
 
2 cups milk
2 cups water
1 cup grits
1 garlic clove, minced
1 cup heavy cream ( we used part heavy cream & part half & half)
1/4 to 1/2 cup butter ( we used 1/4 cup)
1 to 2 cups freshly grated Parmigiano-Reggiano cheese (we used 3/4 cup fresh grated Locatelli Pecorino Romano - it has a stonger flavor)
1 pound shrimp, peeled (we cheated & used already cooked shrimp...just removed the tails)
1 pound baby spinach, baby turnip greens or arugula (we used baby spinach)
Salt & freshly ground black pepper
 
Bring the milk & water to a simmer in a heavy bottomed non-stick saucepan over medium heat. Add the grits and garlic and bring to a boil. Cook until soft and creamy, adding heavy cream as needed to make aloose, but not runny mixture. Add as much butter and cheese as desired, stirring to make sure the cheese doesn't stick. Add the shrimp and cook a few minutes until pink. Fold in the washed and dried greens and remove from heat. The greens will cook in the hot grits.

Got home this evening after picking up our doggie at our daughters. We had a fantastic time at Eboland with great friends that we don't get to see often enough. Sitting around and eating, more sitting around and eating, evening campfires and a refreshing dip in the pool. The food was just unbelievable. People just kept showing up at Eboland. I think they smelt the food way down in the valley. Did someone say we went for a ride? I almost forgot about that part. Great Corvette show too with perfect weather. Ebo was all ready to get into a fight for us when someone tried to tell him those perfect parking spots in the shade by the water that we had were taken.
Many thanks to Al and Lori for opening their home and resort grounds to us. Even the indoor parking. They go out of their way to make you feel welcome.
Now, Al, about that apron????? Big smile

Yes, how 'bout that apron.  I now have photographic evidence (again), although I think I'll have to post in under "Anything Goes" due to content.......or lack there of......

I'm ebo......but Barb made me do it..... the plan was to wake up Elaine, and the way her eyes poked out of her head...lol I think that is what caused her stiff neck LOL
 
Garbage men came this morning.....even the driver had to jump out to help pick up all the garbage...... those guys don't like ebo...Shocked

Hey Barry- There was a light blue 1978 there.  I took a picture for you.  Couldn't believe it when I saw it...I've never seen one besides yours.
